Default bearer is used in lte to provide IP connectivity even if UE is in RRC Idle state when UE and enodeb doesn't have radio connection. Default bearer in a Non-GBR(non guaranteed bit rate) I means there is no radio resource reservation is required in case when no data is flowing through default bearer. one more advantage of keeping default bearer wrt network if default bearer is going to be deleted then all the dedicated bearer associated with that default bearer would be removed at a one shot.
